I’m kind of a sucker for Almond Roca. Usually, this time of year, Costco carries a big tin of it. Last year, I bought one, and I would periodically grab a few. I always regretted it afterwards–usually, headaches and brain fog ensued.
I set to work to come up with a copycat Paleo Almond Roca recipe that would taste amazing, but leave out all the icky side effects. Mostly because I’m lazy, I decided to make these into bars. You could definitely pour the mixture out onto some parchment paper, form into “rolls” and dip in chocolate if you so desire, but as a mom of five kids, I’m all about simple. =)
The best thing? This recipe only has four ingredients!
