Ingredients
  1. 2 cups almond flour
  2. 1 cup coconut sugar (or other granulated sugar that you are comfortable with)
  3. 3/4 cup unsweetened cocoa powder
  4. 2 tsp baking powder
  5. 2 tsp baking soda
  6. 1 tsp salt
  7. 2 eggs
  8. 1/2 cup full-fat, unsweetened coconut milk
  9. 1/2 cup butter or coconut oil, melted
  10. 2 tsp pure vanilla extract
  11. 1/3 cup brewed coffee or water
Instructions
  1. Grease the crockpot with coconut oil.
  2. Mix together all ingredients and spread into the crockpot evenly.
  3. Cook on low for 4-5 hours.
  4. Once the brownies are cooked through, let cool for about a 1/2 hour, and then scoop out with a cookie scoop or large spoon and form into balls.
  5. For an over-the-top dessert, drizzle with my homemade caramel glaze !

    Any substitute for the coconut milk? I’d throw these in the crockpot this minute if I had coconut milk in the house!

    Hi there,
    I shared this with a friend of mine who enjoys baking and he had a hard time with it. He said that after just 15 minutes it seemed to be setting so he turned the setting to keep warm but that after half an hour the edges were burned but the inside was still raw. Any suggestions? Has anyone else experienced anything similar?

    I made these during my snow day and they turned out fantastic!! I halved the sugar and coconut oil but they still were delicious. My husband said they reminded him of macaroons because of the coconut, but I didn’t get that. I think my crockpot cooks way faster than yours because I only cooked them for an hour and a half and they came out so moist.

    Do you know how many calories are in them (I shudder to think about it!)?
