Bacon Cheeseburgers Like You’ve Never Had ‘Em

This recipe was inspired by Diners, Drive-Ins and Dives feature of Dad’s Kitchen restaurant. It’s definitely going to be featured in this week’s menu!

I thought these burgers looked soooo good. I wanted to replicate them in an easy fashion. There are endless possibilities to add in here, but I wanted simple today. I skipped the sauce that they show in the clip, but if I have more time next time, I may give it a try. Let me know if you do!

Recipe: Bacon Cheeseburgers Like You’ve Never Had ‘Em

2 pounds ground beef

1 pound bacon

1-2 tsp garlic salt

pepper to taste

chili powder to sprinkle

Chevre, cheddar, swiss, or any other type of cheese you would like (or none at all–which is how I made it for Superman and I)

In a bowl, combine the ground beef, garlic salt and pepper. Chop the bacon into small pieces. Line a large cutting board or counter top with parchment paper. Using a large round cookie cutter or form (I had a 3-inch cookie cutter), spread some bacon in the cookie cutter, top with some cheese (if desired), top with a fist-full of ground beef, and then take off the form and voila! Beautiful!

 

 

Sprinkle with a bit of chili powder.

Using a flat metal (preferably) spatula, place each burger on a large griddle or grill heated to medium heat, bacon-side-down. Cook for 6-7 minutes. Carefully flip over and cook another 4-5 minutes. Serve over a bed of mixed greens for a great salad! Leave plain, or top with some homemade garlic mayo and mustard, or whatever else you like!

    This looks fab! I have a question regarding cheese. Is there one that is less “problematic” than others? Kinda like we can tolerate homemade yogurt.

    I read that aged cheeses are better (more lactose is gone) & I read somewhere (can’t remember where) that gouda is among the better ones. TJ sells it pretty reasonably.

    Also, Kerrygold (the same co that makes butter) makes cheese from milk from grassfed cows. Our Earthfare gave it away free for St. Patrick’s Day – it is pretty awesome stuff.

    Wow those look delicious! Brent and I like to mix chopped (uncooked) bacon into our ground beef on occasion. We will have to try this soon, and perhaps we should our bacon burger recipe. :) Thanks for the inspiration!
