I had a head of cabbage from our CSA box that I needed to use up, and I wasn’t really sure what to do with it. I also had a package of Aidell’s Chicken Apple Sausage. Then I decided, a wedding between these two was begging to happen. And so it did. And it was one of the quickest, simplest marriages ever. I think they’ll have a long and happy relationship.
Recipe: The Wedding of Sausage & Cabbage
1 medium head cabbage
1 package (4 links) Aidell’s Chicken Apple Sausage (or any of your favorite sausage), cut into bite-size pieces.
2 cloves garlic, minced
3-4 TBSP avocado or coconut oil
salt and pepper to taste
Heat the oil in a large, deep skillet over medium heat. Meanwhile, slice or shred the cabbage into thin strips. Add to skillet and sprinkle with salt, pepper and garlic powder. Stir and cover. Let cook for 3-4 minutes, stir again, and re-cover, cooking for another 4-5 minutes, until beginning to tender. Add in sausage and garlic, salt & pepper, and stir and cover again. Let cook until cabbage is beginning to brown and sausage is warmed through. Enjoy! This is delicious the next day, too!
