I am all about simplicity. As a mom of five kids, it seems that if I’m not careful to plan meals in advance, 3:00 rolls around and I stare doe-eyed into my fridge wondering what the heck I’m going to pull together for dinner. And then I get all stressed out, feel rushed, and usually everyone leaves the table still hungry because I didn’t have time to cook up anything other than the main dish.
I’ve become a huge fan of freezer meals over the past few months. Once a month, I get together with a friend and we prep 5-10 Paleo meals together to put into our freezers. Sometimes we use them for ourselves, sometimes we use them to share with a sick friend, or someone in need. I gotta say, it’s a huge load off my shoulders when I know I’ve got a meal ready to go in the freezer that I can just grab, throw in the crockpot and come home to that night!
I recently wrote an ebook called 10-Minute Prep Freezer Meals, and it’s my most popular product yet! It has 30 Paleo freezer meal recipes, and each meal has wine pairing ideas for those of you who like to enjoy a glass of vino with your dinner. As you can probably guess from the title, all the meals are simple to put together! You can learn more about my ebook HERE or by clicking the image below:
Today I’m going to share with you one of our favorite recipes from the ebook, Slow Cooker Stuffed Peppers. Believe me, you won’t be disappointed in this one!
Shanti Landon is the creator of the popular food + lifestyle blog, Life Made Full. She is a homeschooling mom to five kids and the author of two ebooks: 30 Days to a Life Made Full and 10 Minute Prep Freezer Meals. Shanti started her blog in 2012 after her husband, Chris, was diagnosed with celiac disease, and their family switched to a mostly Paleo diet. Shanti loves running, coffee, pretty much anything chocolate, and watching funny dog videos on Facebook. Oh, and she lets her dog get away with more than she allows her kids. You can catch up with her (and keep tabs on her freakin’ adorable Labradoodle puppy Huck) on Instagram, Twitter, Facebook and Pinterest as well as YouTube.
