Lemon Coconut Cloud Cake

Instructions
  1. Preheat oven to 350 degrees and grease two 8-inch round cake pans with coconut oil. Combine the dry ingredients in a large bowl.
  2. Whisk together the eggs, coconut oil, vanilla, lemon extract, syrup and coconut milk.
  3. Stir into dry ingredients until combined.
  4. Spread into cake pans, and bake for 20-25 minutes.
  5. Let cool completely before removing from pans and frosting, if desired.
  6. I used THIS frosting recipe, and it was amazing!
