Gluten Free Almond Shortbread Cookies

Instructions
  1. Beat butter until smooth
  2. Add sugar, vanilla and almond extract. Beat until smooth.
  3. Slowly add flour into mixture.
  4. Roll batter into 1″ balls and place on a cookie sheet with 2″ between them. (Dough will be soft)
  5. Gently flatten a bit, then bake at 325 for 12-15 minutes or until bottoms begin to brown slightly.
  6. Let cool completely before removing from baking sheet, or cookies may crumble.
