Gluten Free Lemon Bars (the ones my kids beg me to make!)

  1. Preheat oven to 350 degrees.
  2. Combine the 1 cup butter, 1/2 cup organic sugar and 2 cups GF flour, then press into a 9×13 pan until even and compact.
  3. Bake for 15-20 minutes, until golden brown.
  4. While that is baking, whisk together the remaining ingredients.
  5. Remove crust from oven and slowly, carefully pour the lemon mixture on top.
  6. Bake for an additional 20 minutes, then remove and allow to cool (bars will set as they cool).
  7. For maximum yumminess, store in fridge and serve chilled. YUM!!
