Artichoke-Gouda Stuffed Chicken

Instructions
  1. Preheat oven to 350 degrees and line a baking sheet with foil or lightly grease a 9×13 pan with oil.
  2. Lay the breasts flat on a cutting board.
  3. Using a meat tenderizer, beat the meat until it is flattened a bit.
  4. Cut a slit down the middle (don’t cut all the way through the meat).
  5. Stuff the open slit with some of the chopped artichoke hearts and a chunk of gouda cheese, then sprinkle with salt, pepper and garlic powder:
  6. Fold the outer part of the meat over the artichoke and cheese and use a toothpick to hold in place:
  7. Sprinkle with salt, pepper and garlic powder.
  8. Bake in oven for about 20-25 minutes, then top with grated gouda cheese and broil for an additional 5 minutes, until the cheese is browned.
  9. Let cool for a few minutes before eating!
