Recipe: Garlic Grilled Sweet Potatoes
2 medium sweet potatoes
4 TBSP olive oil
1/4 tsp cayenne pepper
1 tsp garlic powder
1 -2 tsp salt + extra to sprinkle
1/4 tsp black pepper
Bring a large pot of water to a boil. Cut each sweet potato in half lengthwise and drop carefully into water. Boil for about 15 minutes, or until fork is just starting to be able to pierce the potato. Remove from pot and place directly into ice cold water to stop cooking. After cooled, peel the skins off (they should peel off very easily with your fingers) and place the potatoes into a large bowl with the remaining ingredients and gently toss to coat. Heat grill (I use a charcoal grill) and place potatoes on grill. Cook for about 4-5 minutes, flip over, and cook another 4-5 minutes, until potato is easily pierced with a fork and the outside is nicely crisped. Remove and sprinkle with a bit more salt, then enjoy!
