This fried banana recipe is amazing. The banana gets caramelized on the outside, and the gooey warmth on the inside combined with the almond butter (or whatever other topping you want to use) is divine! And not only that, there’s no sugar added!
Recipe: Fried Banana Delight (makes 1-2 servings)
1 ripe banana
1 TBSP coconut oil + 1 TBSP coconut oil, separated
almond butter for topping (optional)
Mash together the banana, 1 TBSP coconut oil, salt and cinnamon. Heat the other 1 TBSP coconut oil in a skillet (a cast iron skillet works great here) over medium-high heat. Pour the banana into the center of the skillet and cook for about 3-4 minutes, until caramelizing, then flip over and cook the other side. Remove to a plate and top with almond butter if desired. You can eat this alone, or use another topping of choice.
